Daily Menu Costing

This option will print a menu cost analysis for the Cycle/Week/Days selected.

This report provides a cost analysis based on estimates of what is consumed. There are two methods for this costing. Proportional Weighting and Even weighting.

Cost of Weighting of Alternates

Proportional Weighting - Will provide an estimate based on the First choice item being 80% consumed and one alternate as 20%. If there is a secondary alternate, then the first choice would be 70%, the second choice 20% the third choice 10%.

Even Weighting - Will distribute the costing based on the Primary and alternates equally being consumed. For example if there is only the first choice and one alternate, it would be divided 50% each. If there are three choices, the percentages shown would be at 33.3% each.
